Before ripening, the chilies turn a bright red color, and gradually they become fully ripe. When the red color appears, the chilies are picked from the plants, as the red color indicates they are mature. After picking, they are dried under the sun.

Harvesting red chilies from the field is quite a difficult task, and it's often hard to find people willing to do it because the work is a bit labor-intensive. Here, a large number of chilies have been collected and kept in one place. Seeing so many bright red chilies together looks really nice.

These have been taken outside to dry in the sun, and after drying, they will be brought inside. If the chilies are dried well, they can be preserved for a long time. However, if they are taken indoors while still fresh and moist, they will spoil within a few days. That is why these red chilies are being dried in the sun.
